LET’S MAKE IT
- Whisk eggs, cottage cheese and soy sauce until blended. Reserve.
- Melt 1 Tbsp. butter in medium skillet on medium heat. Add kimchi; cook and stir 1 to 2 min. or until liquid has evaporated. Add egg mixture and cheese, tearing into smaller pieces to cover. Cook, undisturbed until the top of the egg is cooked, less than 1 min. Remove from heat, fold egg in half, then in half again.
- Transfer egg to bottom brioche bun. Top with bacon, arugula and top bun.
