LET’S MAKE IT

  • Combine chicken and dressing in shallow dish; turn to evenly coat all sides of chicken. Refrigerate 30 min. to marinate.
  • Meanwhile, blend avocado, sour cream, lemon juice and zest in food processor until creamy; reserve.
  • Heat grill to medium-high heat. Remove chicken from marinade; discard marinade. Grill chicken 3 to 4 min, then flip. Top with cheese and cook an additional 3 to 4 min. until chicken is done (165°F).
  • Spread avocado mixture onto bottoms and tops of dinner rolls. Top with chicken, tomatoes and arugula.
