Broccoli-Cheddar Soup with Garlic Croutons

LET’S MAKE IT

  • Heat oven to 350F. 
  • Combine bread cubes, 1 Tbsp. oil, 1-1/2 tsp. garlic and 1/8 tsp. black pepper in medium bowl; spread onto baking sheet. Bake 10 min., stirring after 5 min. Remove from heat; cool. 
  • Meanwhile, heat remaining oil in large saucepan on medium heat.  Add onions and remaining garlic; cook 5 to 8 min. or until crisp-tender, stirring frequently.  Add broccoli; cook 5 to 8 min. or until slightly tender and bright green. Remove broccoli mixture from pan with slotted spoon; reserve for later use.  
  • Melt butter in same saucepan.  Add flour; stir until blended.  Cook 2 min. or until hot and bubbly, stirring frequently.  Gradually add chicken broth, then half-and-half, stirring constantly.  Bring to boil; simmer on medium-low heat 10 min., stirring occasionally. 
  • Add reserved broccoli mixture, remaining black pepper and nutmeg; mix well. Cook 15 min. or until broccoli is tender, stirring occasionally. Add 1-1/4 cups shredded cheese to soup; cook and stir 1 to 2 min. or until melted.  Remove from heat. 
  • Serve soup topped with reserved croutons and remaining cheese.
