Apple Cheddar Puff Pastry Skewers with Bacon Jam

WHAT YOU NEED
- 4 slices bacon, finely chopped
- 1 shallot, minced
- 3 Tbsp. maple syrup
- 1/2 cup Granny Smith apples, finely diced
- 2 tsp. lemon juice
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 pkg. (17.3 oz.) frozen puff pastry (2 sheets), thawed
- 24 CRACKER BARREL Extra Sharp Yellow Cheddar Cheese Cubes
LET’S MAKE IT
- Heat bacon and shallot in small saucepan over medium heat. Cook 10 min. or until crispy, stirring occasionally. Drain bacon fat; discard. Stir maple syrup into bacon; cook 2 min. Remove from heat and reserve.
- Meanwhile, toss apples with lemon juice, cinnamon and nutmeg in small bowl.
- Heat oven to 400° Unfold pastry sheets onto cutting board; cut each sheet into 12 squares. Press 1 pastry square onto bottom and up side of each of 24 mini muffin pan cups sprayed with cooking spray.
- Top each pastry square with 1/2 tsp. reserved bacon jam, 1 cheese cube and 1 tsp. of cinnamon apples. Bake 18 to 20 min. or until pastry is golden brown. Gently transfer to serving plate.
